Bacon cups. That’s right. I said bacon cups. Cups made out of bacon.

This was also part of my weekend getaway. Since one of our crew couldn’t have any starch, we came up with this fabulous breakfast idea.

So, we made bacon cups. They were some effort, but not too crazy. But they were crazy delicious. Half of the bacon cups we filled with eggs and baked the eggs in the bacon cups. The other half we left empty for people to make their own breakfast concoctions. I had one bacon cup that I filled with cooked kale and topped with a fried egg and hot sauce. I thought I was going to die of happiness.

So here is how you do it, with some tips that we learned.

Bacon cups

First, preheat your oven to 375.

Then you flip a muffin tin upside down and weave a layer of bacon over the top. Set the muffin tin in a cookie sheet with a rim. This is important! You don’t want a bunch of bacon fat dripping off the muffin tin and into the bottom of your oven.

Once your bacon cups are ready to go in the oven, put another cookie sheet on top of the cups and slide into the oven. We learned to do this on the second batch. The reason is that if you don’t, then when the bacon cooks, it will shrink up and slide off of the muffin tins. The cookie sheet on top keeps them in place.

Bake for about 20-25 minutes, or until the bacon is as crisp as your liking.

Once we had our first round of bacon cups right, we pulled them off the tin and stuck them in a cast iron skillet. We then cracked eggs in each of the bacon cups to make baked eggs.

Doesn’t that just look amazing?

Let the eggs cook for about 10 minutes, or until the whites are set. Then you have a beautiful baked egg in it’s own cup of bacon! These were a treat.

I can’t wait to make more bacon cups. I’ve seen all kinds of fun things online that people have done with them. You could fill them with salad for a bacon salad or with mac and cheese for amazing mac and cheese. And I’ll say again, my cup full of kale was amazing.
